Origin

Guaiacum resin, designated as E314, is a natural antioxidant derived from the resin of trees belonging to the *Guaiacum* genus, primarily *Guaiacum officinale* and *Guaiacum sanctum*. These trees are native to the Caribbean and northern South America. The resin is obtained by tapping the trees or by extracting it from the wood. Historically, guaiacum has been used for medicinal purposes, but its use as a food additive is primarily due to its antioxidant properties.

Usage

As a food additive, guaiacum resin functions as an antioxidant, preventing or delaying the oxidation of fats and oils in food products. This helps to extend the shelf life of foods and prevent rancidity. It has been used in products such as margarine, shortenings, and other fatty foods. However, its use is now quite limited due to regulatory concerns and the availability of more effective and safer synthetic antioxidants. The typical concentration used was very low, usually less than 0.1%.

Side Effects
