Usage

It is often found in baked goods, sauces, dressings, dairy alternatives, and processed foods. In baked goods, it can improve crumb structure and reduce fat absorption. In sauces and dressings, it provides viscosity and stability. It is also used in vegetarian capsules as a substitute for gelatin. HPMC has a unique property of thermal gelation, meaning it forms a gel when heated and returns to a liquid state upon cooling. This property is utilized in some food applications to create interesting textures.

Side Effects

HPMC is generally considered safe for consumption. It is not readily absorbed by the body and is largely excreted unchanged in the feces. The Joint FAO/WHO Expert Committee on Food Additives (JECFA) has established an Acceptable Daily Intake (ADI) of 'not specified', meaning that, based on available data, the intake of HPMC at levels necessary to achieve the desired technological effect in food does not represent a health concern. Some individuals may experience mild gastrointestinal discomfort, such as bloating or gas, if they consume large amounts of HPMC. However, such effects are rare at typical consumption levels. No significant adverse health effects have been reported in scientific literature at levels used in food.
