Usage

Stearyl citrate is primarily used as a synergist for antioxidants in edible oils and fats. It enhances the effectiveness of antioxidants like tocopherols (vitamin E) and ascorbyl palmitate, preventing or delaying rancidity and extending the shelf life of food products. It functions by chelating trace metals that can catalyze oxidation reactions. Stearyl citrate is found in margarine, vegetable oils, shortening, and other fat-containing foods.
