Origin

Potassium metabisulphite (E224) is an inorganic salt derived from sulfurous acid. It is produced synthetically by reacting sulfur dioxide with potassium carbonate or potassium hydroxide. It exists as white crystals or a crystalline powder and has a characteristic sulfur dioxide odor. It is primarily used as a preservative, antioxidant, and sterilizing agent.

Usage

E224 is widely used in the food and beverage industry. It acts as an antimicrobial agent, inhibiting the growth of bacteria, yeasts, and molds. It is commonly found in wine production, where it prevents oxidation and microbial spoilage. It is also used in the preservation of dried fruits, fruit juices, pickled vegetables, and certain baked goods. In brewing, it is used to sterilize equipment and inhibit wild yeast and bacteria. The typical usage levels vary depending on the application, but it is generally used in concentrations ranging from 20 to 200 ppm. It is also used in photographic developers and in various industrial applications.

Side Effects

Potassium metabisulphite is generally considered safe for most people when used at permitted levels. However, some individuals, particularly those with sulfite sensitivity or asthma, may experience adverse reactions. These reactions can include skin rashes, hives, itching, angioedema, respiratory problems (such as wheezing and asthma attacks), and gastrointestinal symptoms. The Joint FAO/WHO Expert Committee on Food Additives (JECFA) has established an Acceptable Daily Intake (ADI) of 0-0.7 mg/kg body weight for sulfites, including potassium metabisulphite. It is important for manufacturers to declare the presence of sulfites on product labels to inform consumers with sensitivities. Overconsumption can lead to sulfite toxicity, although this is rare due to the relatively low levels used in food and beverages.

Regulatory Status

Potassium metabisulphite (E224) is approved for use as a food additive in many countries, including the European Union, the United States, and Canada. In the EU, it is regulated under Regulation (EC) No 1333/2008 on food additives. In the United States, it is Generally Recognized As Safe (GRAS) when used in accordance with good manufacturing practices. Food products containing E224 must be labeled to inform consumers of its presence, particularly due to potential allergic reactions in sensitive individuals. Regulatory bodies continuously monitor and reassess the safety of food additives like E224 based on the latest scientific evidence.
