Usage

E476 is primarily used in chocolate and similar coatings to reduce the viscosity and improve flow properties. This allows for a lower amount of cocoa butter to be used, which can reduce costs. It is also used in low-fat spreads and dressings to stabilize emulsions. The typical usage levels in chocolate range from 0.2% to 0.5%. PGPR functions by decreasing the yield value of chocolate, allowing it to flow more easily during manufacturing processes such as molding and enrobing. This results in better coverage and a smoother surface finish. It is also used to improve the texture and mouthfeel of chocolate products.

Side Effects
