Origin

Caramel color is one of the oldest and most widely used food colorings. It is produced by the controlled heat treatment of carbohydrates, generally in the presence of acids, alkalis, or salts, a process called caramelization. The carbohydrates used can include glucose, sucrose, invert sugar, lactose, malt syrup, molasses, starch hydrolysates, and fractions thereof.

Usage

Caramel color is used in a vast array of food and beverage products to impart shades ranging from light yellow to dark brown. Common applications include soft drinks (colas), beer, sauces, gravies, baked goods, confectionery, and processed foods. It enhances the visual appeal and contributes to the overall sensory experience of these products. There are four classes of caramel color, each with slightly different properties and applications: E150a (Plain Caramel), E150b (Caustic Sulfite Caramel), E150c (Ammonia Caramel), and E150d (Sulfite Ammonia Caramel).

Side Effects

While generally regarded as safe, some concerns have been raised regarding certain types of caramel color, particularly E150c and E150d, due to the presence of compounds like 4-methylimidazole (4-MEI), which can form during the manufacturing process. High levels of 4-MEI have shown carcinogenic effects in animal studies. Regulatory bodies like the EFSA and FDA have established limits for 4-MEI in caramel color and have concluded that the levels found in food products pose no significant health risk to humans at current consumption levels. The Acceptable Daily Intake (ADI) varies depending on the specific type of caramel color. For example, the ADI for E150a is 'not specified', while for E150c and E150d, specific ADIs have been established to ensure safe consumption levels. It's important to note that individual sensitivities can vary, and some people might experience mild digestive discomfort from consuming large quantities of caramel color.
