À propos de cet additif

Origin

Caustic sulphite caramel (E150b) is a type of caramel color produced by heating carbohydrates (commercially available food-grade dextrose, sucrose, and invert sugar) with sulphite compounds. Unlike other caramel colors, it is produced using both an acid or alkali and sulphite compounds. The sulphites contribute to its unique color and properties.

Usage

E150b is widely used as a food coloring agent to impart a yellow to reddish-brown hue to various food and beverage products. It is commonly found in products such as sauces, gravies, baked goods, soft drinks (especially colas), beer, and processed foods. Its primary function is to enhance the visual appeal of these products. The presence of sulphites in its production contributes to its stability in certain applications. The amount used is dictated by the desired color intensity in the final product.

Side Effects

While generally considered safe for consumption within acceptable daily intake (ADI) levels, some individuals may experience adverse reactions to sulphites. Sulphite sensitivity can manifest as allergic reactions, including hives, itching, swelling, and difficulty breathing, particularly in asthmatic individuals. The Joint FAO/WHO Expert Committee on Food Additives (JECFA) has established an ADI of 'not specified' for caramel colours as a group, which includes E150b, meaning that at the levels used in food, it does not represent a health concern. However, it is important for manufacturers to declare the presence of sulphites in the ingredient list to allow consumers to make informed choices, especially those with known sulphite sensitivities.

Regulatory Status

E150b is approved for use as a food additive in many countries, including those in the European Union, the United States, and Canada. Regulations specify the purity criteria and maximum levels of use in different food categories. In the EU, it is subject to Regulation (EC) No 1333/2008 on food additives. In the United States, it is regulated under the Code of Federal Regulations (CFR) Title 21. These regulations aim to ensure that the additive is used safely and that consumers are adequately informed about its presence in food products.
