Origin

Sorbitol, also known as glucitol, is a sugar alcohol (polyol) naturally found in some fruits, such as apples, pears, peaches, and prunes. Commercially, it is produced by the enzymatic hydrogenation of glucose. The process involves reducing glucose with hydrogen under high pressure and in the presence of a nickel catalyst. This converts the aldehyde group of glucose into a hydroxyl group, resulting in sorbitol.

Usage

Sorbitol is widely used in the food industry as a humectant, sweetener, and texturizer. As a humectant, it helps retain moisture in food products, preventing them from drying out. It is approximately 60% as sweet as sucrose (table sugar) and is often used in sugar-free or reduced-sugar products. Sorbitol is also used in pharmaceuticals, cosmetics, and personal care products. In confectionery, it prevents sugar crystallization. In baked goods, it contributes to softness. It is also used as a stabilizer in fruit juices and as a carrier for flavors and vitamins.

Side Effects

Sorbitol is generally recognized as safe (GRAS) by regulatory agencies when consumed in moderate amounts. However, excessive consumption can lead to gastrointestinal issues such as bloating, gas, abdominal cramps, and diarrhea. This is because sorbitol is poorly absorbed in the small intestine, and the unabsorbed sorbitol is fermented by bacteria in the large intestine, producing gas and causing osmotic effects that draw water into the colon. Individuals with Irritable Bowel Syndrome (IBS) may be more sensitive to these effects. The European Food Safety Authority (EFSA) has not established a numerical Acceptable Daily Intake (ADI) for sorbitol, considering it safe at the levels typically consumed. However, they acknowledge the potential for gastrointestinal effects at high doses. It is important to note that products containing significant amounts of sorbitol are often required to carry a warning about potential laxative effects.

Sorbitol is approved for use as a food additive in many countries, including the United States, the European Union, and Canada. In the United States, it is regulated by the Food and Drug Administration (FDA) and is considered GRAS. In the European Union, it is designated as E420 and is permitted for use in various food applications under specific conditions. The Joint FAO/WHO Expert Committee on Food Additives (JECFA) has also evaluated sorbitol and established an ADI of "not specified," indicating that it is considered safe at current levels of intake.
