Origin
Potassium sulphates (E515) are inorganic salts of potassium and sulphuric acid. They exist in two main forms: potassium sulphate (E515(i)) and potassium hydrogen sulphate (E515(ii)), also known as potassium bisulphate. Potassium sulphate occurs naturally as the mineral arcanite. Industrially, it can be produced by reacting potassium chloride with sulphuric acid or from the mineral kainite.Usage
Potassium sulphates are used in the food industry as acidity regulators and flavour enhancers. They can also function as carriers for other additives. E515 helps to maintain a consistent pH level in food products, preventing spoilage and preserving texture. It is commonly found in baked goods, processed fruits and vegetables, and certain beverages. In agriculture, potassium sulphate is a common fertilizer due to its potassium and sulphur content, both essential plant nutrients.Side Effects
Potassium sulphates are generally considered safe for consumption at levels typically used in food. The Joint FAO/WHO Expert Committee on Food Additives (JECFA) has not established a numerical Acceptable Daily Intake (ADI) for potassium sulphate, indicating its low toxicity. However, excessive consumption of potassium salts may lead to hyperkalemia, a condition characterized by elevated potassium levels in the blood. Individuals with kidney problems are more susceptible to hyperkalemia and should monitor their potassium intake. At high concentrations, potassium bisulphate can be corrosive.Regulatory Status
Potassium sulphates (E515) are permitted food additives in the European Union (EU) under Regulation (EC) No 1333/2008 on food additives. The European Food Safety Authority (EFSA) has evaluated the safety of potassium sulphates and concluded that they are safe for use in food at the permitted levels. In the United States, potassium sulphate is Generally Recognized As Safe (GRAS) by the Food and Drug Administration (FDA) when used in accordance with good manufacturing practices.Quellen
