E249 is used as a curing agent in meat products. Its primary function is to inhibit the growth of *Clostridium botulinum*, the bacterium responsible for botulism, a severe form of food poisoning. It also contributes to the characteristic color and flavor of cured meats. It reacts with myoglobin in the meat to form nitrosomyoglobin, which, upon heating, converts to the pink pigment nitrosoheme, giving cured meats their distinctive color. Additionally, it acts as an antioxidant, preventing rancidity and preserving the flavor of processed meats.
