À propos de cet additif

Origin

Ascorbic acid, also known as Vitamin C, is a naturally occurring organic compound with antioxidant properties. It is a white to light-yellow crystalline solid, soluble in water. It can be synthesized chemically or extracted from natural sources such as fruits and vegetables, particularly citrus fruits, berries, and leafy green vegetables. Industrial production often involves a multi-step process starting from glucose.

Usage

As a food additive, ascorbic acid serves multiple purposes. It is primarily used as an antioxidant to prevent oxidation and browning of foods, thus extending shelf life and maintaining color and flavor. It also acts as a nutrient supplement, providing Vitamin C to the diet. Ascorbic acid is commonly found in processed fruits and vegetables, beverages, baked goods, and cured meats. It is also used as a dough improver in baking, enhancing the elasticity and volume of bread. Its ability to reduce iron makes it useful in preventing discoloration in some foods.

Side Effects

Ascorbic acid is generally considered safe for consumption at typical levels used in food. The EFSA (European Food Safety Authority) has established an Acceptable Daily Intake (ADI) that is not limited, meaning no specific limit has been set due to its low toxicity. However, very high doses of ascorbic acid (several grams per day) may cause gastrointestinal disturbances such as diarrhea, nausea, and abdominal cramps in some individuals. These effects are usually temporary and resolve upon reducing the dosage. There are no known significant long-term health risks associated with ascorbic acid consumption at levels typically found in food or supplements.

Regulatory Status

Ascorbic acid (E300) is approved for use as a food additive in many countries, including the United States, the European Union, and Canada. It is regulated under various food safety regulations, which specify the permitted uses and maximum levels in different food categories. In the EU, it is listed as an approved food additive with specific purity criteria. In the US, it is Generally Recognized As Safe (GRAS) by the FDA when used in accordance with good manufacturing practices.
