À propos de cet additif
Origin
Ammonium alginate (E403) is a salt of alginic acid, a polysaccharide derived from brown algae (Phaeophyceae). These algae include species such as *Laminaria digitata*, *Laminaria hyperborea*, *Ascophyllum nodosum*, and *Macrocystis pyrifera*. The alginic acid is extracted from the cell walls of these algae, and then reacted with ammonium compounds to form ammonium alginate. The resulting product is a gum that can be used in food and other applications.Usage
Ammonium alginate is primarily used as a thickening, gelling, stabilizing, and emulsifying agent in various food products. It helps to improve the texture and consistency of foods. Specific applications include: * **Desserts:** Stabilizes and thickens puddings, ice cream, and other creamy desserts. * **Bakery Products:** Improves the texture and moisture retention of baked goods. * **Sauces and Dressings:** Acts as a stabilizer and thickener, preventing separation of ingredients. * **Beverages:** Used in some beverages to provide a smooth texture and prevent sedimentation. * **Processed Foods:** Employed in various processed foods to improve texture and stability.Side Effects
Ammonium alginate is generally considered safe for consumption. Alginates are poorly absorbed by the body, and most of it is excreted in the feces. No significant adverse effects have been reported in studies evaluating the safety of alginates. However, as with any food additive, some individuals may experience mild gastrointestinal discomfort, such as bloating or diarrhea, if consumed in large quantities. The Joint FAO/WHO Expert Committee on Food Additives (JECFA) has established an Acceptable Daily Intake (ADI) of "not specified" for alginates, indicating that, at the levels used in food, they do not pose a health risk. Regulatory bodies like the EFSA and FDA also consider alginates safe for use in food under Good Manufacturing Practices (GMP).Regulatory Status
Ammonium alginate (E403) is approved for use as a food additive in many countries, including those in the European Union, the United States, and Canada. It is subject to regulations regarding its purity and use levels to ensure food safety and quality. In the EU, it falls under the general provisions for food additives as outlined in Regulation (EC) No 1333/2008. The FDA includes alginates in its list of substances Generally Recognized As Safe (GRAS) when used in accordance with GMP.Sources
