À propos de cet additif

Origin

E470, encompassing sodium, potassium, calcium, and magnesium salts of fatty acids, are derived from edible fats and oils, either of vegetable or animal origin. These fatty acids are typically long-chain saturated and unsaturated acids, such as stearic, palmitic, and oleic acids. The salts are produced through saponification or neutralization processes.

Usage

These salts function primarily as emulsifiers, stabilizers, anti-caking agents, and release agents in food production. They are used to improve the texture, consistency, and shelf life of various food products. Specifically, they prevent clumping in powdered foods, aid in the uniform dispersion of ingredients in emulsions, and facilitate the release of products from molds or processing equipment. Common applications include baked goods, confectionery, dairy products, processed fruits and vegetables, and dietary supplements. They are also used in cosmetics and pharmaceuticals as stabilizers and emulsifiers.

Side Effects

E470 salts are generally considered safe for consumption at levels typically used in food. The Joint FAO/WHO Expert Committee on Food Additives (JECFA) has evaluated these substances and established an Acceptable Daily Intake (ADI) of 'not specified,' meaning that, based on available data, the intake of these substances at levels necessary to achieve the desired technological effect does not represent a health concern. However, individuals with specific sensitivities or allergies to certain fatty acids might experience mild gastrointestinal discomfort. No significant adverse effects have been reported in the general population at normal consumption levels.

Regulatory Status

E470 is permitted for use as a food additive in many countries, including those in the European Union, the United States, and Canada. Regulations specify the types of foods in which it can be used and the maximum permitted levels. In the EU, E470 is subject to Regulation (EC) No 1333/2008 on food additives. The FDA in the United States regulates these substances under various sections of the Code of Federal Regulations (CFR), depending on the specific application. These regulations ensure that the additive is used safely and effectively in food production.
