Origin

Sorbic acid is a naturally occurring organic compound. It was first isolated from unripe rowan berries (Sorbus aucuparia), hence the name. Commercially, it is primarily produced synthetically through the condensation of ketene and crotonaldehyde. This synthetic route allows for large-scale production to meet the demands of the food and beverage industries.

Usage

Sorbic acid is widely used as a food preservative due to its antimicrobial properties, particularly against molds and yeasts. It is effective in a pH range below 6.5, making it suitable for use in many food products. Common applications include cheese, baked goods, fruit juices, wines, pickles, and processed meats. It inhibits the growth of spoilage microorganisms, extending the shelf life of these products. Sorbic acid can be applied directly to food surfaces, incorporated into packaging materials, or added during the manufacturing process. It is also used in cosmetics and pharmaceuticals.

Side Effects

Sorbic acid is generally considered safe for consumption at permitted levels. The Joint FAO/WHO Expert Committee on Food Additives (JECFA) has established an Acceptable Daily Intake (ADI) of up to 25 mg/kg body weight. Some individuals may experience mild skin or eye irritation upon direct contact with concentrated sorbic acid. Allergic reactions are rare but possible, manifesting as skin rashes or gastrointestinal upset. Studies have shown that sorbic acid is rapidly metabolized in the body and does not accumulate in tissues. However, as with any food additive, excessive consumption should be avoided. It is important to note that when sorbic acid is combined with ascorbic acid (Vitamin C) under certain conditions, it can potentially form small amounts of benzene, a known carcinogen. Regulatory agencies monitor this potential risk and set limits to minimize benzene formation in food products.
