Origin

Carotenoids are a class of naturally occurring pigments synthesized by plants, algae, and photosynthetic bacteria. Usage

Carotenoids are widely used as food colorants to enhance or restore the color of processed foods. They are added to products like margarine, cheese, pasta, beverages, and baked goods to improve their visual appeal. Beyond their coloring properties, some carotenoids, particularly beta-carotene, lutein, and lycopene, are valued for their antioxidant and provitamin A activities. Side Effects

Carotenoids are generally considered safe for consumption. Beta-carotene has an Acceptable Daily Intake (ADI) of up to 15 mg/day. Excessive consumption of carotenoid-rich foods or supplements can lead to carotenodermia, a harmless yellowing of the skin, particularly noticeable on the palms and soles. This condition is reversible upon reducing carotenoid intake. High doses of beta-carotene supplements have been associated with an increased risk of lung cancer in smokers in some studies. However, carotenoids from food sources do not carry the same risk. There are no known significant allergic reactions associated with carotenoids.

Carotenoids are approved for use as food additives in many countries, including the United States, the European Union, and Canada. In the EU, they are collectively designated as E160, with various subtypes (e.g., E160a for beta-carotene, E160b for annatto, E160c for paprika extract). Regulatory bodies like the European Food Safety Authority (EFSA) and the U.S. Food and Drug Administration (FDA) have evaluated the safety of carotenoids and established acceptable usage levels in food products. The specific regulations and permitted levels may vary depending on the type of carotenoid and the food application.
