Origin

Caramel I, also known as Plain Caramel, is produced by the controlled heat treatment of carbohydrates, generally in the presence of acids, alkalis, or salts. The carbohydrates used are commercially available food-grade nutritive sweeteners which are dextrose, glucose syrups, invert sugar, lactose, malt syrup, molasses, starch hydrolysates, and sucrose. No ammonium or sulfite compounds are used in its manufacture.

Usage

Caramel I is widely used as a food coloring agent. It imparts a light yellow to reddish-brown color to various food and beverage products. Common applications include its use in bakery products, sauces, gravies, snack foods, and beverages such as beer and soft drinks. It is valued for its stability and cost-effectiveness.

Side Effects

Caramel I is generally recognized as safe (GRAS) by regulatory agencies worldwide. The Joint FAO/WHO Expert Committee on Food Additives (JECFA) has established an Acceptable Daily Intake (ADI) of 'not specified' for Caramel I, indicating that, based on available data, the use of Caramel I at levels necessary to achieve the desired technological effect does not pose a health risk. However, as with any food additive, excessive consumption should be avoided. Some individuals may experience mild gastrointestinal discomfort with very high intakes, although this is rare. There are no known significant allergic reactions associated with Caramel I.
