À propos de cet additif

Origin

Non-amidated pectins (E440i) are naturally occurring polysaccharides found in the cell walls of plants, particularly in fruits such as apples, citrus fruits (lemons, limes, oranges, grapefruits), and sugar beets. They are extracted from these sources, typically from the peel of citrus fruits or apple pomace, which are byproducts of juice and cider production. The extraction process involves heating the plant material in an acidic solution, followed by purification and drying.

Usage

Non-amidated pectins are widely used in the food industry as gelling agents, thickeners, and stabilizers. They are particularly effective in the production of jams, jellies, marmalades, and fruit preserves, where they contribute to the desired texture and consistency. They also find applications in confectionery, bakery products, and dairy products. Pectins can also be used in fruit juices to maintain pulp suspension and prevent sedimentation. Furthermore, they are used in some pharmaceutical and cosmetic applications as a binding agent or stabilizer.

Side Effects

Non-amidated pectins are generally considered safe for consumption. The Joint FAO/WHO Expert Committee on Food Additives (JECFA) has established an Acceptable Daily Intake (ADI) of 'not specified,' indicating that, based on available data, the use of pectins in food does not pose a health risk at levels necessary to achieve the desired technological effect. Some individuals may experience mild gastrointestinal discomfort, such as bloating or gas, if they consume large quantities of pectin, particularly if they are not accustomed to a high-fiber diet. Allergic reactions to pectin are rare.

Regulatory Status

Non-amidated pectins (E440i) are approved for use as a food additive in many countries, including those in the European Union, the United States, and Canada. They are subject to regulations regarding purity and identity to ensure their safety and quality. In the EU, the use of E440i is governed by Regulation (EC) No 1333/2008 on food additives. In the United States, pectins are Generally Recognized As Safe (GRAS) under FDA regulations.
