À propos de cet additif

Origin

Alpha-cyclodextrin (α-cyclodextrin) is a cyclic oligosaccharide composed of six glucose units linked by α-1,4-glycosidic bonds. It is produced by enzymatic degradation of starch, typically using cyclodextrin glycosyltransferase (CGTase). The enzyme is produced by various Bacillus species. The resulting mixture of cyclodextrins (alpha, beta, and gamma) is then separated, and alpha-cyclodextrin is purified.

Usage

Alpha-cyclodextrin is used in the food industry as an encapsulating agent, stabilizer, and carrier for flavors, fragrances, and other bioactive compounds. Its cyclic structure allows it to form inclusion complexes with various molecules, protecting them from degradation and improving their solubility and bioavailability. It is used in various food products, including baked goods, beverages, confectionery, and processed foods. It can also be used to reduce cholesterol levels in certain food products. Alpha-cyclodextrin is also used in pharmaceuticals and cosmetics for similar purposes.

Side Effects

Alpha-cyclodextrin is generally recognized as safe (GRAS) by regulatory agencies when used at appropriate levels. Studies have shown that it is well-tolerated and has low toxicity. Some individuals may experience mild gastrointestinal discomfort, such as bloating or flatulence, if consumed in large quantities. The ADI (Acceptable Daily Intake) has not been specified by JECFA, indicating its low toxicity profile. However, as with any food additive, excessive consumption should be avoided.

Regulatory Status

Alpha-cyclodextrin is approved for use as a food additive in many countries, including the United States, the European Union, and Japan. In the EU, it is designated as E457. Regulatory bodies like the European Food Safety Authority (EFSA) and the U.S. Food and Drug Administration (FDA) have evaluated its safety and established guidelines for its use in food products. It is generally considered safe when used according to good manufacturing practices.
