À propos de cet additif

Origin

Glutamic acid is a naturally occurring non-essential amino acid. It is found in virtually all foods, especially in high-protein foods such as wheat gluten, soy protein, casein, and meat. It is also produced naturally in the human body. Commercially, glutamic acid is produced through bacterial fermentation of carbohydrates, such as beet molasses or starch hydrolysates.

Usage

Glutamic acid is primarily used as a flavor enhancer. It imparts a savory or umami taste to foods. It is often used in processed foods, soups, sauces, and seasonings to enhance their flavor profile. It is also a precursor to monosodium glutamate (MSG), another common flavor enhancer. The free glutamate content in food contributes to its palatability. It is also used in some dietary supplements.

Side Effects

Glutamic acid is generally recognized as safe (GRAS) by regulatory bodies when used at normal levels. However, some individuals may be sensitive to high doses of glutamic acid or MSG, experiencing symptoms such as headache, flushing, sweating, and a tingling sensation. These symptoms are often referred to as "MSG symptom complex." The Joint FAO/WHO Expert Committee on Food Additives (JECFA) has established an Acceptable Daily Intake (ADI) of 'not specified', meaning that, based on available data, the intake of glutamic acid from food does not represent a health concern. It is important to note that individual sensitivities can vary.

Regulatory Status

Glutamic acid is permitted as a food additive in many countries, including the United States, the European Union, and Japan. In the EU, it is designated as E620. Regulations govern its use in food products, ensuring that it is used at levels considered safe for consumption. The FDA in the United States also regulates its use as a food additive.
