Origin

Curdlan is a high-molecular-weight, water-insoluble polysaccharide consisting of β-1,3-glucan. It is produced by a variety of bacteria, primarily *Agrobacterium* species, during fermentation. It was first discovered in the 1960s by a Japanese researcher and has since been commercially produced.

Usage

Curdlan is used in the food industry as a gelling agent, texturizer, and stabilizer. Upon heating, curdlan undergoes irreversible gelation, forming a firm, elastic gel. The gel strength depends on the concentration of curdlan and the heating temperature. It is utilized in various food products, including imitation meats, tofu, noodles, processed seafood, and baked goods. It improves the texture, water-holding capacity, and overall quality of these products. Curdlan can also be used in edible films and coatings.

Side Effects

Curdlan is generally recognized as safe (GRAS) by regulatory agencies. Studies have shown that it is not toxic or mutagenic. As a polysaccharide, it is largely indigestible by humans and passes through the digestive system without being absorbed.
