Origin

Monosodium glutamate (MSG) is the sodium salt of glutamic acid, a naturally occurring non-essential amino acid. Glutamic acid is present in nearly all foods, especially high-protein foods such as meat, poultry, fish, milk, and vegetables. MSG is produced through the fermentation of starch, sugar beets, sugarcane, or molasses, similar to how vinegar, yogurt, and wine are made. The fermentation process yields glutamic acid, which is then neutralized with sodium to form MSG.

Usage

MSG is primarily used as a flavor enhancer. It imparts a savory taste, often referred to as umami. It is widely used in processed foods, restaurant meals (particularly in Asian cuisine), soups, sauces, seasonings, and snack foods. MSG enhances the existing flavors of foods, making them more palatable. The typical concentration of MSG used in foods ranges from 0.2% to 0.8% by weight.

Side Effects

MSG has been a subject of controversy regarding potential side effects. Some individuals report experiencing symptoms such as headache, flushing, sweating, facial pressure or tightness, numbness, heart palpitations, chest pain, nausea, and weakness after consuming foods containing MSG. This collection of symptoms has been referred to as "MSG symptom complex" or "Chinese Restaurant Syndrome." However, scientific evidence has not consistently supported a causal link between MSG consumption and these symptoms. Rigorous double-blind, placebo-controlled studies have generally failed to demonstrate that MSG causes these symptoms when consumed at typical levels. Some sensitive individuals may experience mild and transient symptoms when consuming large doses of MSG (3 grams or more) on an empty stomach. Regulatory bodies have established that MSG is safe for the general population at normally consumed levels.

Regulatory Status

MSG is approved for use as a food additive by numerous regulatory agencies worldwide, including the U.S. Food and Drug Administration (FDA), the European Food Safety Authority (EFSA), and the World Health Organization (WHO). The FDA classifies MSG as Generally Recognized As Safe (GRAS). EFSA has established an Acceptable Daily Intake (ADI) of 30 mg/kg body weight per day for glutamates, including MSG, added to food. The WHO has also concluded that MSG is safe when used at levels necessary to achieve the desired technological effect.
