À propos de cet additif

Origin

Potassium malate is the potassium salt of malic acid, a naturally occurring dicarboxylic acid found in many fruits, especially apples. It can be produced synthetically through the neutralization of malic acid with a potassium base, such as potassium hydroxide or potassium carbonate. The resulting salt is potassium malate. Malic acid itself is widely distributed in nature and is involved in various metabolic processes.

Usage

Potassium malate is used in the food industry primarily as an acidity regulator, flavor enhancer, and buffering agent. It helps to control the pH of food products, preventing them from becoming too acidic or alkaline. This is particularly useful in beverages, jams, jellies, and processed fruits. It can also contribute to the overall taste profile of foods by providing a tart or slightly sour flavor. In some cases, it is used as a mineral supplement to increase potassium content. It is also used in some pharmaceutical preparations.

Side Effects

Potassium malate is generally considered safe for consumption. Malic acid is a natural component of many foods, and potassium is an essential mineral. The Joint FAO/WHO Expert Committee on Food Additives (JECFA) has not established a numerical Acceptable Daily Intake (ADI) for malic acid and its salts, indicating its low toxicity. However, excessive consumption of potassium salts can lead to hyperkalemia, a condition characterized by elevated potassium levels in the blood. Individuals with kidney problems or those taking certain medications should exercise caution. Allergic reactions are rare but possible. As with any food additive, it is advisable to consume potassium malate in moderation.

Regulatory Status

Potassium malate is approved for use as a food additive in many countries, including those in the European Union (EU) and the United States. In the EU, it is designated with the E number E351. Regulations specify the conditions of use and maximum permitted levels in various food categories. The FDA in the United States also recognizes potassium malate as Generally Recognized As Safe (GRAS) when used in accordance with good manufacturing practices.
