Sodium carboxymethyl cellulose (CMC), also known as cellulose gum, is a cellulose derivative with carboxymethyl groups (-CH2-COOH) bound to some of the hydroxyl groups of the glucopyranose monomers that make up the cellulose backbone. It is synthesized by the alkali-catalyzed reaction of cellulose with chloroacetic acid. The polar (organic acid) carboxymethyl groups render the cellulose soluble and chemically reactive. It is often used as its sodium salt, sodium carboxymethyl cellulose.Usage
E466 is widely used in the food industry as a thickening agent, stabilizer, emulsifier, and binder. It helps to improve the texture and consistency of various food products. Specific applications include its use in baked goods to improve crumb structure and moisture retention, in sauces and dressings to increase viscosity and stability, in ice cream to prevent ice crystal formation, and in beverages to provide a smooth mouthfeel. It is also used in diet foods to provide a feeling of fullness due to its indigestible fiber content. Furthermore, it finds application in non-food products such as detergents, paper, and pharmaceuticals.Side Effects
Sodium carboxymethyl cellulose is generally considered safe for consumption. The Joint FAO/WHO Expert Committee on Food Additives (JECFA) has established an Acceptable Daily Intake (ADI) of 'not specified', meaning that, based on available data, the intake of CMC at the levels necessary to achieve the desired technological effect in food does not represent a health hazard. However, some individuals may experience gastrointestinal discomfort, such as bloating or diarrhea, if consumed in large quantities, due to its high fiber content. Allergic reactions are rare but possible. Studies have shown that high doses of CMC can cause intestinal inflammation in mice with pre-existing conditions. However, these effects have not been consistently observed in humans at typical dietary levels.Regulatory Status
