Origin

Sodium ferrocyanide is a synthetic compound produced by reacting hydrogen cyanide with ferrous chloride and then treating with sodium hydroxide. It is a coordination complex of iron and cyanide, but the cyanide is tightly bound and not readily released.

Usage

E535, sodium ferrocyanide, is primarily used as an anticaking agent in table salt. It prevents the formation of lumps and ensures the salt remains free-flowing. The permitted levels are strictly regulated to ensure consumer safety. It is also used in the production of certain food-grade acids and as a clarifying agent for wine and juice. The amount used is very small and is considered safe by regulatory bodies.
