About this additive

Origin

Gamma-Cyclodextrin (γ-cyclodextrin) is a cyclic oligosaccharide composed of eight glucose units linked by α-1,4-glycosidic bonds. It is produced by enzymatic conversion of starch, typically using cyclodextrin glycosyltransferase (CGTase). The enzyme is usually derived from Bacillus species. The resulting mixture is then purified to isolate the gamma-cyclodextrin.

Usage

Gamma-cyclodextrin is used in the food industry as an encapsulating agent, flavor stabilizer, and to improve the solubility and bioavailability of various compounds. It can encapsulate flavors, fragrances, and bioactive compounds, protecting them from degradation and controlling their release. It is also used to reduce bitterness or off-flavors in certain foods and beverages. Common applications include baked goods, beverages, confectionery, and processed foods. It is also used in pharmaceutical and cosmetic applications.

Side Effects

Gamma-cyclodextrin is generally considered safe for consumption at permitted levels. The Joint FAO/WHO Expert Committee on Food Additives (JECFA) has established an Acceptable Daily Intake (ADI) of "not specified," meaning that, based on available data, the intake of gamma-cyclodextrin at levels necessary to achieve the desired technological effect in food does not represent a health concern. However, excessive consumption may lead to gastrointestinal discomfort in some individuals due to its potential to bind to nutrients and alter gut flora. Some studies have indicated that high doses could cause diarrhea or bloating. Regulatory bodies like EFSA and FDA have reviewed safety data and established usage guidelines.

Regulatory Status

Gamma-cyclodextrin is approved for use as a food additive in many countries, including the European Union (EU) and the United States. In the EU, it is designated as E458. Regulations specify the permitted uses and maximum levels in various food categories. In the United States, it is generally recognized as safe (GRAS) for specific uses under certain conditions. The regulatory status is continuously reviewed based on new scientific evidence.
