Origin

Sodium gluconate is the sodium salt of gluconic acid, produced by the fermentation of glucose. It's a white to tan, granular to fine, crystalline powder, very soluble in water. Industrially, it is produced by the fermentation of glucose using microorganisms like *Aspergillus niger* or by electrochemical oxidation.

Usage

Sodium gluconate is widely used in various industries due to its chelating, sequestering, and cleaning properties. In the food industry, it functions as a sequestrant, stabilizer, and texturizer. It can prevent the formation of milk stone in dairy processing, improve the texture of processed fruits and vegetables, and enhance the effectiveness of cleaning agents used in food processing equipment. It is also used in cleaning products, metal finishing, and the construction industry as a concrete admixture to retard setting and improve workability. Its chelating properties make it useful in removing mineral deposits.
