In the food industry, high viscosity mineral oil is used as a lubricant, release agent, and protective coating. It can be applied to baking pans to prevent sticking, used as a component of protective coatings for fruits and vegetables to reduce moisture loss and extend shelf life, and as a defoaming agent in fermentation processes. It's also used in confectionery to impart a glossy appearance. When used according to good manufacturing practices (GMP), high viscosity mineral oil is generally considered safe for food applications. The Joint FAO/WHO Expert Committee on Food Additives (JECFA) has established an Acceptable Daily Intake (ADI) of 0-0.01 mg/kg body weight for mineral oil. Excessive intake can lead to the accumulation of mineral oil in the body, particularly in the liver and lymph nodes. This accumulation has been associated with adverse health effects in animal studies, including granuloma formation. However, the levels used in food applications are typically low, and the risk of adverse effects is considered minimal when intake remains within the ADI. Some individuals may experience mild gastrointestinal discomfort with high doses.Regulatory Status
