Origin

Erythorbic acid, also known as isoascorbic acid or D-arabo-ascorbic acid, is a stereoisomer of ascorbic acid (vitamin C). It is synthesized chemically, typically from sugars such as sucrose. Unlike ascorbic acid, erythorbic acid has very little vitamin C activity. It was first synthesized in the 1930s.

Usage

Erythorbic acid is primarily used as an antioxidant food additive. It is added to foods to inhibit oxidation, thereby preserving color, flavor, and overall quality. It is particularly effective in preventing the formation of nitrosamines in cured meats, which are carcinogenic compounds. Erythorbic acid is commonly found in processed meats, canned vegetables, and beverages. It is also used in some pharmaceutical and cosmetic applications as an antioxidant. The typical usage levels vary depending on the application but are generally within the range of a few hundred parts per million.

Side Effects

Erythorbic acid is generally considered safe for consumption. The Joint FAO/WHO Expert Committee on Food Additives (JECFA) has established an Acceptable Daily Intake (ADI) of 'not specified,' meaning that, based on available data, the intake of erythorbic acid at levels necessary to achieve the desired technological effect does not represent a health concern. Some individuals may experience mild gastrointestinal discomfort, such as bloating or diarrhea, at very high doses, but these effects are rare. No significant adverse health effects have been reported in studies evaluating the safety of erythorbic acid at levels used in food.

Regulatory Status

Erythorbic acid (E317) is approved for use as a food additive in many countries, including the United States, the European Union, and Canada. In the United States, it is Generally Recognized as Safe (GRAS) by the Food and Drug Administration (FDA) under specific conditions of use. In the European Union, it is permitted as a food additive under Directive 2006/52/EC. The regulatory status ensures that the additive is used within safe limits and according to good manufacturing practices.
